Pad Kra Pow (Thai Basil Pork)

A fast, punchy Thai stir-fry -- ground pork in garlic, chili, and holy basil over rice, topped with a crispy fried egg. Ready in about 20 minutes, start to finish.

  1. In a small bowl, mix the fish sauce, soy sauce, oyster sauce, sugar, and seasoning powder. Set aside -- this is your stir-fry sauce.
  2. Crush the garlic and chilies together in a mortar and pestle (or pulse in a mini chopper) until roughly broken down.
  3. Heat the oil in a wok or large skillet over medium-high heat. Add the garlic-chili paste and stir-fry about 20 seconds until fragrant.
  4. Add the ground pork, breaking it apart with your spatula. Cook 2-3 minutes, stirring often, until just cooked through -- don't overcook it or it'll turn tough.
  5. Pour in the sauce mixture and toss to coat the pork evenly.
  6. Turn off the heat, add the holy basil, and stir just until wilted.
  7. Serve over jasmine rice, topped with a crispy fried egg if you'd like.
Tips from the kitchen:

No rosdee seasoning powder on hand? A pinch of MSG-free chicken bouillon powder works as a substitute. Can't find holy basil? Thai basil or even regular Italian basil will get you most of the way there -- the flavor won't be identical, but it'll still work.
