Make the sauce: combine the oyster sauce, soy sauce, sugar, rice vinegar, ketchup, and water in a small saucepan over low-medium heat. Stir until the sugar dissolves, then simmer 1-2 minutes. Remove from heat and set aside.
Cut the chicken into bite-sized pieces. Heat the oil in a wok over medium heat, add the garlic, and stir-fry about 10 seconds until fragrant.
Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5-6 minutes. Remove and set aside.
In the same pan, add the onion, bell pepper, pineapple, and cucumber. Stir-fry 2-3 minutes until just tender.
Pour in the sauce, add the tomato wedges, and toss to coat everything evenly; let it bubble for a minute.
Return the chicken to the pan and toss to warm through. Garnish with chopped green onion and serve hot with rice.
